The spirit of the site
In 1990, we decided to renew the delicious tradition of distilling at the estate. The spirit of Chambertin seemed to us to be the only one worthy of being “captured”. The Chambertin grapes would therefore be entrusted to the creative impulse of the distiller.
Solve et coagula! The distillation, which occurs at the beginning of January, is a peculiar moment in Burgundy: a magical instant when fire, water and earth are invited to a mysterious wedding. At this time, in the silence of our cellars, the slow quenching of the alcohol’s fire can begin.
Today, this eau-de-vie, this marc with copper hues and subtle, elegant aromas brings a new original, unique and bright dimension to the expression of our site.
